
This is a simple home-made chocolate log, made with a few simple, easily available ingredients. And while it isn’t as fancy as some of the layered, perfectly rolled logs you see on the internet, my kids love it. Every time my mother rolled out this log, it would be gone in two days or less. There’s no baking involved. You mix in all the ingredients, roll out the log and freeze for an hour and you are done.
Ingredients
- Marie Biscuits (or similar) – 200 gms (approximately 40 biscuits)
- White (unsalted) Butter – 2 tbsp.
- Cocoa Powder – 1 tbsp.
- Icing Sugar (or just regular sugar powdered in a blender) – 2 tbsp.
- Regular granulated sugar – 5 tbsp.
- Vanilla Essence – 1 tsp.
- Eggs (beaten) – 2
Method
- Powder one half of the biscuits in a blender. Break the other half into small pieces and keep aside.
- Mix in butter, cocoa powder, icing sugar and regular sugar in a heavy bottomed pan over a medium flame until it all blends together.
- Add in the powdered biscuits and mix well. Take the mixture off the flame and allow it to cool.
- Beat the eggs and mix in the vanilla essence. Add to the mixture above.
- Replace the pan on to the fire and stir everything for about 2 mins.
- Take off flame, add in the broken pieces of biscuit and fold them in well.
- Spread the mixture over butter paper and roll the paper over to form a log. Lock in the ends and freeze for an hour or until it feels like it has set.
- Remove the butter paper, slice the log and store in an air tight container in the refrigerator.
