Simple Sponge Cake: A Quarantine Treat

Before these incredibly trying few weeks, my family and I would eat at a restaurant at least once a week. With the threat of COVID-19 hanging over us, we don’t have any luxuries of the sort. Not only are we stuck at home, we cannot so much as order food in. This has had us craving a treat long enough to have found a recipe on the internet for sponge cake that can be done with only supplies we always have at home. Not only was it simple, it was absolutely delicious.

If you would like something to look forward to as well, the ingredients are:

  • 1 ½cups of flour
  • 1 cup of sugar (you can adjust it to your taste; for example, we used 2 tablespoons less than a cup
  • A ¾ cup of salted butter (add a pinch of salt if you’re using unsalted butter)
  • 1 teaspoon of vanilla essence
  • 1 teaspoon of baking powder
  • ½a cup of milk
  • ¼teaspoon of salt
  • 2 eggs

The method is very simple. Preheat the oven at 150 degrees celsius for 15 minutes. Start by sieving the flour and baking powder. Beat the eggs and vanilla essence until fluffy; add in the sugar and continue beating to one-ribbon consistency. Fold in the flour gradually to make a smooth batter. Heat the milk and butter and pour into the mixture.

Grease the cake tin with flour and butter and pour the batter into the tin. Bake at 180 degrees Celsius for 25 minutes. Feel free to lick the cake batter off the bowl while you wait: it is almost as good as the cake itself.
